Description

This homemade pistachio liqueur is a creamy, nutty, and indulgent Italian-style digestif made with roasted pistachios, fresh cream, and vodka or grain alcohol. Perfect as a holiday gift or after-dinner treat, this smooth and vibrant green liqueur is easy to prepare and tastes even better with time. Whether sipped chilled or used in cocktails and desserts, it's a unique addition to your homemade liqueur collection.

Ingredients
    Base Ingredients
  • 1 cup pistachios (unsalted, shelled)
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cups ¼ granulated sugar
  • 1 vanilla bean (or 1 tsp vanilla extract)
  • 1½ cups pure grain alcohol or vodka (at least 80 proof)
  • A pinch of salt
  • Green food coloring (optional, for aesthetics)
Instructions
  1. 1
Start by lightly roasting pistachios in a preheated oven at 350°F (175°C) for about 5–7 minutes. Let them cool completely. This enhances their aroma and depth.
  2. 2
Place the cooled pistachios in a high-speed blender with 1 cup of milk. Blend until very smooth. Pour into a saucepan and add the rest of the milk, cream, sugar, salt, and split vanilla bean. Simmer over medium-low heat for 10–12 minutes, stirring constantly.
  3. 3
Once the mixture thickens slightly, remove from heat. Let it cool, then strain through a fine mesh sieve or cheesecloth to remove solids. Discard the pulp or use it in a dessert.
  4. 4
When the mixture reaches room temperature, add the alcohol and stir well. Add a drop or two of green food coloring if you want a vivid pistachio hue.
  5. 5
Pour into a clean glass bottle or jar. Seal tightly and refrigerate for at least 48 hours before using. The longer it rests, the better the flavors develop — even 1 week makes a noticeable difference.
