    Basic Milk Jam Ingredients:
  • 4 cups whole milk (the higher the fat, the creamier the result)
  • 1 1/4 cups ¼ granulated sugar
  • 1/2 teaspoon baking soda
  • 1 tsp vanilla bean or 1 tsp vanilla extract (optional)

    In a large, heavy-bottomed saucepan, combine the milk, sugar, and baking soda. If using vanilla bean, split it open and scrape the seeds into the pot, adding the pod as well.

    Lower the heat to keep the mixture at a low simmer. Stir frequently, scraping the bottom and sides to prevent scorching. The milk will gradually thicken and deepen in color, turning a rich amber caramel hue.
