Ingredients
  • 2 lobster tails , split and meat removed
  • 8 oz linguine or spaghetti
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 5 garlic cloves, minced
  • 1/2 tsp red pepper flakes (optional for heat)
  • 1/2 cup dry white wine (like Sauvignon Blanc)
  • 1 and Juice zest of lemon
  • 1/4 cup finely chopped fresh parsley
  • Salt and freshly ground black pepper, to taste
  • Grated parmesan, optional for garnish
  • Lemon wedges, for serving

    Using kitchen shears, cut through the top of each lobster tail shell. Gently pull the meat out and lay it on top of the shell or fully remove it. Chop into bite-sized pieces and pat dry.

    In a large pot, boil water with a generous pinch of salt. Cook the linguine until al dente according to package instructions. Reserve ½ cup of pasta water, then drain and set aside.

    While the pasta cooks, heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and red pepper flakes. Sauté for 1–2 minutes, just until fragrant—do not let it brown.

    Add the chopped lobster meat to the pan. Season lightly with salt and pepper. Cook for 3–4 minutes, stirring gently until the lobster turns opaque and tender.

    Pour in the white wine and let it simmer for about 2 minutes to allow the alcohol to cook off. Stir in lemon juice, lemon zest, and remaining tablespoon of butter.

    Add the cooked pasta and reserved pasta water to the skillet. Toss to coat in the sauce. Let it simmer for a minute to meld the flavors. Sprinkle chopped parsley and toss once more.
