  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1/2 bell pepper, sliced (red or green)
  • 2 stalks scallions, chopped
  • 1 tsp paprika
  • 1/2 tsp allspice
  • 1/2 tsp turmeric (for extra color)
  • Salt and black pepper, to taste
  • 1½ cups low-sodium chicken or vegetable stock
  • 2 tbsp vegetable oil
  • Juice of ½ lime
