Ingredients
    Pasta: 12 ouncesĀ
  • 2 Peppers Chipotle in Adobo Sauce: 2-3 peppers (adjust based on spice tolerance)
  • 1 cup Heavy Cream
  • 2 Chicken Breasts (medium-sized chicken breasts) (grilled, baked, or pan-seared)
  • 3 cloves Garlic (finely minced)
  • 1/2 cup Parmesan Cheese
  • 1 Yellow White Onion (medium)
  • Cilantro
  • 1 tablespoon lime juice
Instructions
  1. 1
Begin by cooking your pasta according to the package instructions. Be sure to salt the water generously to add flavor to the pasta. Once cooked, drain and set aside, saving a little pasta water for the sauce if needed.
  2. 2
While your pasta is cooking, season your chicken breasts with salt, pepper, and a pinch of paprika.
  3. 3
Grill or pan-sear the chicken until cooked through (about 5-7 minutes per side depending on thickness). Let the chicken rest for a few minutes before slicing it thinly.
  4. 4
In a large skillet, heat some olive oil over medium heat. Add the diced onions and cook until they become translucent. Add the minced garlic and cook for another minute until fragrant.
  5. 5
Add the chipotle peppers in adobo sauce (finely chopped) and cook for another 2 minutes, allowing the flavors to meld together. Pour in the heavy cream, stirring to combine. Reduce the heat and let the sauce simmer for 3-5 minutes until it thickens.
  6. 6
Add the cooked pasta to the skillet, tossing to coat it evenly with the creamy chipotle sauce. If the sauce seems too thick, add a little reserved pasta water to reach your desired consistency.
  7. 7
Add the sliced chicken on top of the pasta and sprinkle with freshly grated parmesan cheese (and cheddar, if you prefer). Stir gently to combine.
  8. 8
    Serve and Garnish
